Chicken Zucchini Soup (30min Recipe)

-Ingredients-

1tsp olive oil

1 large onion diced

8 cups chicken or turkey broth

1/2 tsp poultry seasoning

1/2 tsp basil

1 cup carrot sliced

1 cup celery sliced

2 cups Chopped chicken or turkey

1 large Zucchini 

1 tbs chopped Parsley 

Salt & pepper to your tasting!

-Directions-

Slice your Zucchini into strips

Heat a pan with oil over medium heat. Cook onion until its tender add your meat. Cook til brown (5mins)

Add broth, seasonings, carrots, & celery, let simmer uncovered (15-20mins) or until veggies are tender.

Add Zucchini strips let Cook 1-2mins (or until tender)

Let it sit 2mins to soften & then serve!

 

 

 

Low carb Foods

Meats such as, Chicken breast, lean cuts of beef e.g. sirloin & tenderloin, Pork, Shellfish, Tofu. 

Fats such as Avocados, Coconut oil, Nuts e.g. Almonds, Walnuts & Pecans, Seeds Pumpkin, Chia, & Flax, Salmon, Greek yogurt.

Non-starch Veggies such as leafy greens e.g. Spinach, Kale, Broccoli, Cauliflower, Bell peppers, Zucchini, Cucumber, Green beans, & Mushrooms.

Fruits- Berries e.g. strawberries, blueberries, raspberries, Melons such as watermelon, cantaloupe, dew melon, peaches, plums, & kiwi. (these have natural sugars) 

Beans- lentils, chickpeas, green peas, black beans, kidney beans, pinto beans, navy beans.

Beverages- Water, unsweet teas, Unsweet black coffee, Sugar free sparkling water (moderation some have high sodium) bone broth, Diet drinks (in moderation always check the labels) Sugar free soda (check labels & drink in moderation) red or white wine, spirits (without sugary mixers)
